The Pan Bagnat: The Iconic Sandwich of the French Riviera

When walking through the colorful streets of Nice, between flower markets and sun-drenched facades, there is a scent that often stands out: fresh bread, olive oil, and sun-ripened vegetables. That is where the pan bagnat truly belongs. Far more than just a sandwich, it embodies the spirit of Niçoise cuisine.

The name pan bagnat literally means “wet bread” in the Niçoise dialect. Originally, fishermen and workers used slightly stale bread, which they soaked in olive oil and tomato juice to soften it. They then added whatever they had on hand: raw vegetables, anchovies or tuna, sometimes olives. A simple, affordable, and nourishing recipe perfectly suited to Mediterranean life.

Over time, the pan bagnat became a true institution on the French Riviera. It can now be found in all bakeries in Nice, at local markets, and even in some traditional restaurants. But locals remain very strict about the authentic recipe: no mayonnaise or modern ingredients are allowed to alter this regional classic.

What makes the pan bagnat so special is its authenticity. It represents a generous, sharing-oriented cuisine deeply connected to local products: ripe tomatoes, olive oil, basil, black olives, and quality tuna. Every bite evokes holidays, the sea, and simple meals eaten in the shade of pine trees.

Traditional Pan Bagnat Recipe: Ingredients and Preparation

Preparing an authentic pan bagnat at home brings a touch of Mediterranean sunshine to your plate. The traditional recipe is simple, but ingredient quality is essential to capture the true flavors of Nice.

Ingredients (serves 4)

  • 4 small round country rolls
  • 2 ripe tomatoes
  • 1 small red onion
  • 1 green bell pepper
  • A few radishes
  • 2 hard-boiled eggs
  • 150 g canned tuna or anchovy fillets
  • A handful of Niçoise black olives
  • Fresh basil leaves
  • Extra virgin olive oil
  • Salt and pepper

Preparation steps

1. Prepare the raw vegetables
Wash the tomatoes, pepper, and radishes carefully. Slice the tomatoes, finely chop the red onion and pepper, and thinly slice the radishes.

2. Prepare eggs and fish
Boil the eggs for about 9 minutes. Once cooled, peel and quarter them. Drain the tuna or prepare the anchovy fillets.

3. Prepare the bread
Cut the round rolls in half and generously drizzle the inside with olive oil. This step gives the pan bagnat its soft, fragrant character.

4. Assemble the sandwich
Place tomatoes on the bread first so they lightly soak into it. Then add pepper, radishes, onion, eggs, tuna or anchovies, olives, and fresh basil. Season with salt, pepper, and another drizzle of olive oil.

5. Close and rest
Close the sandwich and press it gently. Let it rest for about 15 minutes so the flavors blend together perfectly.

Pan Bagnat

A Mediterranean icon to enjoy by the sea

Eating a pan bagnat on the French Riviera is almost a ritual. It is often bought early in the morning at a local bakery before heading to the beach or the hills of the hinterland. Wrapped in paper, still fragrant with basil and olive oil, it has accompanied seaside picnics for generations.

In Nice, everyone has their favorite address and their own opinion on the best version. But all agree on one point: ingredient quality makes all the difference.

As a tour guide, I often recommend visitors try a pan bagnat at a local market or along the Promenade. It is a simple and authentic way to experience Mediterranean lifestyle. Behind this generous sandwich lies a true culinary heritage, shaped by sunshine, simplicity, and conviviality.

The pan bagnat is not just a Niçoise specialty — it is an invitation to travel. A recipe that tastes like summer, holidays, and shared meals in complete simplicity. A true icon of the French Riviera’s cuisine
